Food, fun & friends

I have been going on about my goal this year to Be More Social.  The aim is really to make the most of the relationships that matter to me.  We've had weekends away, nights out & nights in!

A few weeks ago we had a Buffet Night.  We asked friends from the street over for a catch up, some food & some drinks.

I knew I was gonna be short on time to prepare the food so I took to trusty pinterest for inspiration with the main aim of finding quick, easy finger/buffet foods.  Lots of things came up & I will continue to keep pinning them to my buffet board for when we do nibbles again.

Menu Planning

With so much to choose from I was in danger of going over board!  Yes, I am the one who tries to feed the 5000 & ends up with so much leftovers, not to mention putting myself under great pressure to get it all ready!  So I sat down & whittled my selection down.  I had tabs with recipes open & my tesco shopping basket open so I could also keep a track of how much it was all going to cost me!

Most of the things I went with are variations on the pins on my board.  See my menu below & my pictures above - I keep forgetting to take pics so I missed a few things but you get the drift.


The mango, mozzarella & proscuitto or chorizo are so quick & easy - even Mr B could cope assembling these! I bought mozzarella pearls & chopped mango - cos I knew I would be short on time. These are fab, a great wee nibble to prepare & they look good too!

We did have a disaster tho (I say we it was all Mr B!)  Luckily we had an extra box of cocktail sticks!

I bought the dips - humous lemon & coriander (my fav) & tzatziki & I made a tomato/pepperoni sauce

I used rolled puff pastry for my sun dried tomato pin wheels & I used fresh pizza dough for my dough balls.  These are both so quick to make - look fab & taste so yummy.  I loved playing around with different combos inside the dough balls but mainly cheese based cos that's what we had!

If you were really organised you could make your own pastry & dough & freeze them for such an occasion as buffet night!  Maybe next time.

The wraps went down a treat - I bought cooked chicken breasts, diced into small pieces then added to my two different fillings.  I love chicken with tarragon & use this recipe because I like the creme fraiche, mayo & lemon mix that you can taste through the filling.  The other one was basically a thin spread of creme fraiche, add some chicken & salsa mix & a touch of rocket.

The trick with the wraps is don't try to over fill them.  If you spread your mixture all over, right to the ends each slice has plenty of filling & they cut much better.

I bought the brownie & summer fruit macaroons which were to die for from good old Marks & Spencers.

So yeah I bought a lot of things but I knew I would be stretched with time as we had a hectic weekend planned.

We ate, we drank & we chatted for hours - it was a slowly nibble away at each course kind of affair.

We all enjoyed the offerings & each others company!  So all in all I don't think I did to bad at all at hosting with no time at all to shop, cook or plan.
